Quiche Lorraine

  • 3 eggs
  • 1 cup heavy cream
  • 1 cup Gruyere, Ementaler or Jarlsberg swiss shredded
  • 1 t salt
  • 1/4 t pepper
  • 1 t dijon mustard
  • 1/2 cup ham, diced
  • 1 Green onion, sliced
  • 9" pie shell


  1. Preheat oven to 350 degrees.
  2. Lightly coat the crust with the mustard and bake for 10 minutes, remove and cool
  3. Whisk together the eggs, cream, salt and pepper
  4. Combine the ham, onions and cheese
  5. Place the dry ingredients in the prebaked crust, DO NOT press down on the filling – you should have enough to fill the crust to the top
  6. Pour the egg mixture over the filling –it should come up to just below the top layer of the filling
  7. Bake for 45-55 minutes, or until just set in the center
  8. Let cool to warm before slicing
