Pumpkin Chocolate Chip Muffins

INGREDIENTS

  • 4.5 c All Purpose Flour
  • 1 ½ t. Baking Powder
  • ¾ t. Baking Soda
  • 1 ½ t. Dried Ginger
  • ¼ t. Clove
  • 1 t. Nutmeg
  • 1 T. Cinnamon
  • 6 Eggs
  • 2 c. Sugar
  • 1 c. Brown Sugar
  • 3 c. Canned Pumpkin
  • 1 ¾ c. + 2 T. Vegetable Oil
  • 2 c. Chocolate Chips

DIRECTIONS

  1. Preheat over to 300 degrees
  2. Combine all dry ingredients
  3. Beat together eggs, sugar, pumpkin, and oil
  4. Mix the dry and wet together until just moistened
  5. Fold in chocolate chips last
  6. Scoop onto a cookie sheet. A 4 oz. scoop makes about 18 or so
  7. Convection bake at 300 degrees for 20-25 minutes
