Fresh Strawberry Muffins

INGREDIENTS

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup melted butter
  • 1 cup sour cream
  • 1 tsp vanilla
  • grated zest of one lemon
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 cup sliced fresh strawberries

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Beat eggs and slowly add sugar.
  3. Add the melted butter, sour cream, vanilla and lemon zest, beating until smooth.
  4. Gradually add the dry ingredients, then fold in the strawberries.
  5. Spoon batter into greased muffin tins and bake for about 20 minutes, until golden on top.
